The recipe said to whip equal parts instant coffee, sugar and hot water (2 tbsp). They recommended an electric mixer, but I don’t really have one of those. So, I pulled out my trusty whisk and started mixing.

At first, it was just a weird watery mixture that smelled vaguely of coffee. As I whisked though, the mixture started to gradually thicken. And when I say gradually, I really mean with the excruciating slowness of the eventual death of the universe.

I whisked. And I whisked. And I whisked.

I whisked for 20 minutes. Sitting on my counter (as one does), I watched the awkward glop transform into something vaguely resembling a meringue. No soft peaks, but I was determined to see the soft fluff float on top of a mug of sweet almond milk.

Milk, ice cubes and then a spoon to carefully place the foam on top. A straw to complete the picture. I swirled the clouds of coffee into my iced milk, eager to taste this famous creation. I put the straw to my lips and pulled. I got a mouth full of almond milk—no coffee foam to speak of.

Let’s try that again. I put the straw aside and put the cup to my mouth.

The coffee was far too sweet, and yet somehow far too bitter. My first sip of whipped coffee may be destined to also be my last.

My first mistake: I should invest in an electric mixer. Second mistake? Instant coffee isn’t going to have the depth and breadth that I’m used to in my coffee. And I really like my coffee.

Final thoughts. This is not an everyday coffee. It took me 20 minutes just to whisk the coffee foam. Maybe for a special occasion, or a sweet treat. But I’m not willing to get up extra early for a whipped concoction of coffee and sugar. TikTok can have its whipped coffee; I think I’m good for now.
